Thai Stone Fruit Salad

Juicy cherries and peaches combined with a kick of jalapeno, aromatic basil and mint, and a satisfying crunch from roasted peanuts. A squeeze of lime juice and a sprinkle of kosher salt tie it all together. After marinating, this refreshing, sweet-and-spicy salad will be the star of your summer table.




  • 1 cup cherries, stemmed and halved
  • 2 peaches or nectarines, sliced into 1” pieces
  • 1 jalapeno, seeded and finely diced
  • ½ bunch basil, chiffonaded
  • ½ bunch mint, chiffonaded
  • ½ cup roasted peanuts, chopped
  • 1 lime, juiced
  • 1 tsp kosher salt


  1. Place stone fruit into a medium mixing bowl. Toss with lime juice, fresh herbs, and salt.
  2. Add peanuts, toss to coat.
  3. Allow to marinate for 1-2 hours before serving.
