- Meatballs
- 1 lb ground pork from Carlton Farms
- 1 lb ground beef from Double R Ranch
- ½ yellow onion, finely minced
- 4 cloves garlic, minced
- 1 cup panko
- 1 egg
- 1 tbsp sweet chili sauce
- 2 tsp kosher salt
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne (optional)
- ½ tsp black pepper
- ½ tsp dried oregano
- ½ tsp dried thyme
- ¼ tsp celery salt
- Gochujang Glaze
- ¼ cup sambal oelek
- ¼ cup soy sauce
- 2 cloves garlic, minced
- ⅓ cup honey
- 1 tbsp Worcestershire
- 1–2 tsp anchovy paste (optional but adds depth)
- ¼ cup lemon juice
- ½ tsp kosher salt
- ¼ tsp ground fennel
- 1 tbsp fresh grated ginger
- ¼ cup sweet chili sauce
Instructions
- Combine all meatball ingredient in a large bowl. Mix just until combine. Roll into 1-1.5 inch balls.
- Bake at 400°F for 15-18 minutes or pan-sear until browned and cooked through.
- Make the sauce. Add all glaze ingredients to a saucepan. Simmer 5-10 minutes until slightly thickened.
- Toss warm meatballs in the sauce until fully coated.
- Optional finishing move (highly recommedn): Serve over greens or rice and hit with herbs, sesame seeds, or a squeeze of lime.
