PCF Signature Meatballs

PCF Signature Meatballs featuring Carlton Farms pork and Double R Ranch beef, seasoned with garlic, herbs, and spices, then finished in a bold, sweet-heat gochujang glaze.

Ingredients

  • Meatballs
  • 1 lb ground pork from Carlton Farms
  • 1 lb ground beef from Double R Ranch
  • ½ yellow onion, finely minced
  • 4 cloves garlic, minced
  • 1 cup panko
  • 1 egg
  • 1 tbsp sweet chili sauce
  • 2 tsp kosher salt
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne (optional)
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp celery salt
  • Gochujang Glaze
  • ¼ cup sambal oelek
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • ⅓ cup honey
  • 1 tbsp Worcestershire
  • 1–2 tsp anchovy paste (optional but adds depth)
  • ¼ cup lemon juice
  • ½ tsp kosher salt
  • ¼ tsp ground fennel
  • 1 tbsp fresh grated ginger
  • ¼ cup sweet chili sauce

Instructions

  1. Combine all meatball ingredient in a large bowl. Mix just until combine. Roll into 1-1.5 inch balls.
  2. Bake at 400°F for 15-18 minutes or pan-sear until browned and cooked through.
  3. Make the sauce. Add all glaze ingredients to a saucepan. Simmer 5-10 minutes until slightly thickened. 
  4. Toss warm meatballs in the sauce until fully coated.
  5. Optional finishing move (highly recommedn): Serve over greens or rice and hit with herbs, sesame seeds, or a squeeze of lime.
