Ingredients

  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander
  • 4 pork chops bone in
  • 1 tablespoon olive oil
  • 1 lb plums, sliced in half
  • ¼ cup wallawalla onions, diced
  • 2 tablespoons sugar
  • 1 tablespoon balsamic vinegar
  • 1/8 teaspoon crushed red pepper flakes

Instructions

  1. Preheat grill to 375 degrees.
  2. Mix salt, pepper, garlic powder, and coriander in a bowl. Season pork with spice mix and let sit for 30 minutes.
  3. In a large saucepan, heat 1 tablespoon olive oil over medium-high heat. Add onion, stirring occasionally, until softened.
  4. Stir in plums, sugar, balsamic vinegar and crushed red pepper flakes over medium heat for 5 minutes.
  5. Grill pork chops for 4-6 minutes per side depending on thickness.
  6. Let pork rest for 5 minutes.
  7. Serve plum chutney over grilled pork chops.
