Ingredients
- 3 cups heirloom tomato, roughly chopped
- ¾ cup mini cucumbers
- ½ bunch green onions, roughly chopped
- ¼ cup red onion, roughly chopped
- 2 jalapeños, seeded and roughly chopped
- ½ bunch Italian parsley, stems removed
- ¼ cup lime juice
- 2 tablespoon salt
- 1 tablespoon black pepper
Instructions
- Place all vegetables into a blender, including spices, lime juice, and herbs.
- Blend on medium speed to a smooth consistency.
- Slowly drizzle olive oil until thoroughly combined.
- Chill for 2-3 hours before serving.
- Optional garnish: crème fraiche, drizzle of olive oil, chopped parsley
