Ingredients

  • 3 anjou pear, halved, seeded, and center hollowed
  • ¼ cup walnuts, roasted and chopped
  • 4oz gorgonzola crumbles
  • 3 springs thyme, leaves only
  • 2 oz dried cranberries
  • 1 oz baby arugula, roughly chopped
  • 2 tbl hot honey
  • 1 oz extra virgin olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly-cracked black pepper

Instructions

  1. Preheat oven to 425F.
  2. Place walnuts, gorgonzola, and thyme onto a cutting board. Roughly chop to combine.
  3. Lay pear halves onto a baking sheet, skin side down. Top with olive oil, salt, and pepper.
  4. Divide walnut mixture between the six pear halves. Drizzle 1 tbl hot honey over the stuffed pears.
  5. Place in oven, and bake for 15 minutes.
  6. Top with dried cranberries, arugula, and remaining hot honey. Serve immediately!
