Ingredients

  • 2 kohlrabi, peeled and thinly sliced
  • 3 gala apples, peeled, cored, and thinly sliced
  • ½ bunch cilantro, chopped
  • ½ cup cashew halves, roasted
  • 1 cup greek yogurt
  • ¼ cup honey
  • ¼ cup avocado oil
  • 2 tablespoons curry powder
  • 2 tablespoons salt

Instructions

  1. Whisk together Greek yogurt, honey, oil, curry powder, and salt.
  2. In a large mixing bowl, thoroughly toss kohlrabi and apple slices in curried yogurt.
  3. Allow to chill for 30-60 minutes before serving.
  4. Top with cilantro and cashews.
